SECU House Dinner

Date: Nov 15, 2015 at 4:00pm to 7:00pm
SECU House provides a cheap place to stay for families who have a loved one in the hospital. Having a home cooked meal helps them during this stressful time, so your time is greatly appreciated. IMPORTANT: Arrange to carpool or just meet at Harris Teeter in Carrboro at 4pm to buy ingredients. You have a $60 budget, and please put it all on one card. Give Ilsa or Jenny the receipt and you'll get reimbursed. Be at SECU by 5pm to start cooking. Dinner is served at 6pm. Ingredients: (Plan to buy enough for 35 people) Chicken breasts ~ 10lbs Italian breadcrumbs Eggs - 1 carton Tin foil Frozen green beans Boxed Mac and Cheese Brownie mix Recipe: Preheat oven to 375 degrees Line a sheet pan with foil and coat with cooking spray (or just brush on some oil) In a medium-sized bowl, put in breadcrumbs. Whisk egg in a separate bowl and dip chicken. Toss individual pieces in panko and place on sheet pan. Spray with some more cooking spray and bake in oven for 12 to 15 minutes Serve “nuggets” with condiments of choice (like BBQ sauce, ketchup, mustard – I’m sure you’ll find something in that fridge of yours!) Have fun!
